Expertise and Research Interests

Research interests include the search for novel value-adding agricultural products that may be developed into nutraceutical products or added as ingredients in functional foods having health beneficial effects. Novel food products containing high levels of nutritional components such as vitamins, essential fatty acids, antioxidants, and other phytochemicals, and properties such as anti-diabetic effects, antiproliferation of cancer cells, cyclooxygenase II enzyme inhibition, and antioxidant activities are currently under investigation. This research is intended to help expand the understanding of food related health for both the scientific field and the general population and may lead to an increase in profits for growers and producers of agricultural products.

Future Research

Isolation and identification of individual compounds in fruits and vegetables that are responsible for effective physiological changes in eukaryotic cells that may be used to prevent and/or treat several diseases.
