I conduct research, teach and supervise graduate research on the chemical and biochemical properties of cereals and legumes to improve their agronomic, processing, and feed/food quality attributes. Specific areas of research include the type, distribution and bioactivity of antifungal proteins, hydroylic enzymes and phenolic compounds in corn, sorghum, and legumes, characterization and functionality of proteins in cereals and legumes, and the chemical, physical and structural properties of starch and proteins during food processing.
